Vegan Waffles

This is the best vegan waffles recipe to whip up on a sleepy morning. Hiding underneath the crispy golden brown exterior is a beautifully fluffy texture, sans eggs or milk!

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1-3/4 cups soy milk
  • 1/4 cup canola oil
  • 1 to 2 teaspoons vanilla extract
  • Fresh fruit and confectioners' sugar or syrup

Directions

  1. In a bowl, combine flour, sugar, cornstarch, baking powder, salt and baking soda. Add soy milk, oil and vanilla to dry ingredients; stir just until combined.
  2. Bake in a preheated waffle maker according to manufacturer's directions until golden brown (may take slightly longer than recommended). Serve with fruit and confectioners' sugar or maple syrup.
