Picnic Cupcakes

Ingredients

  • 1 package chocolate or yellow cake mix (regular size)
  • filling:
    • 1 package (8 ounces) cream cheese, softened
    • 1 large egg, lightly beaten
    • 1/3 cup sugar
    • 1 cup semisweet chocolate chips

Directions

  1. Prepare cake mix batter according to package directions for cupcakes. Fill 24 paper-lined muffin cups two-thirds full.
  2. In a small bowl, beat the cream cheese, egg and sugar until smooth. Fold in chips.
  3. Drop by tablespoonfuls into batter. Bake at 350° for 20 minutes or until a toothpick inserted in the cupcake comes out clean.
