French Coconut Pie

French Coconut Pie

Ingredients

  • 3 large eggs, beaten
  • 1-1/2 cups sugar
  • 1 cup whole milk
  • 1/2 cup butter, melted
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 cup sweetened shredded coconut
  • 1 unbaked pastry shell (9 inches)

Directions

  1. In a bowl, combine all ingredients except pie shell. Pour into the pie shell and bake at 400° for 10 minutes. Reduce heat to 325° and bake 40 minutes or until top is golden and the center is almost set. When cool, store in the refrigerator.
